Cream-baked Onions

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the onions

  1. Peel the onions and cover them with boiling water. Boil for 10 minutes, then drain.

  2. Cover the onions again with boiling water, adding ½ teaspoon of salt, and cook until tender. Drain carefully.

Bake and serve

  1. Place the onions in a baking dish. Top each onion with 1 teaspoon of butter, and season with pepper and coarse sea salt to taste.

  2. Fill the dish halfway with milk and cover with a layer of fine bread crumbs.

  3. Bake at 350°F (175°C) until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onions
Form the main body of the dish and soften into a tender, sweet base.
Butter
Adds richness and helps the top brown golden in the oven.
Milk
Forms the creamy sauce around the onions as it heats and thickens.
Fine bread crumbs
Form a crisp, golden topping that browns in the oven.

The step that matters

Cooking the onions until tender. Onions that are not fully tender before baking will stay firm and sharp, because the long oven time alone may not soften them fully. Drain them well so excess water does not dilute the milk sauce.

Swap the onion

How well each one fits the dish's main ingredients (butter, pepper, milk, bread):
