Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lower shank of meat
Provides the main body of meat, which becomes tender through boiling and is cut into dice.
Gelatin
Sets the cooled liquid into a firm, sliceable mass in the mold.

The step that matters

Keep the boil short. Gelatin sets by forming a network as it cools. Prolonged boiling can weaken that network, so the mixture should boil only briefly before it is poured into the cold mold to set.

Swap the mace

How well each one fits the dish's main ingredients (meat, pepper, celery, allspice, clove, gelatin):

  1. Cinnamonfits better
  2. Thymefits better
  3. Nutmegfits better
  4. Macethe original

Fit is the average pairing score against meat, pepper, celery, allspice, clove, gelatin. Candidates are from the same food group and used in at least 100 recipes.
