What each ingredient does

Pineapple
Provides the fruit that is preserved and softened by the sugar.
Granulated sugar
Draws out moisture and acts as a preservative, sweetening the fruit.

The step that matters

Adding the equal weight of sugar and stirring well. Sugar must be evenly distributed through the fruit so that it draws out juice and preserves every piece; uneven mixing leaves unsugared pockets that can spoil.
