Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ripe tomatoes
Form the bulk of the sauce, providing body, moisture and the base flavour of the ketchup.
Cider vinegar
Adds acidity that sharpens the flavour and helps preserve the ketchup.
Cloves
Contribute a warm, aromatic spice flavour to the sauce.
Black pepper
Adds a sharp, pungent spice note that balances the tomato sweetness.
Nutmegs
Add a warm, aromatic spice flavour to the sauce.

The step that matters

Boil the mixture for half an hour, then let it cool and settle.. Boiling concentrates the tomato and drives off excess water while softening the spices so their flavour blends evenly. Letting it settle before bottling gives a smoother, more stable sauce.

Swap the tomato

How well each one fits the dish's main ingredients (clove, pepper, nutmeg, cider, vinegar):

  1. Capsicumfits better
