What each ingredient does

Fresh-ground coffee
Provides the main coffee flavour and aroma that the water extracts.
Isinglass chips
Gelatin-like fining agent that binds fine particles so they settle and the coffee clears.

The step that matters

Pouring out a cupful 2-3 times to clarify the coffee. Isinglass only clears coffee when the fine grounds are already suspended and removed. Pouring off the cloudy first portions, rather than skipping this, keeps the final drink from tasting muddy or gritty.
