Why it works: Summer savory and flour match in chemistry and in kitchens. They rank in the top 7% of all ingredient pairs, and cooks put them together in 263 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

Ingredients

Directions

Make the broth

  1. Boil the leg of mutton for three hours.

  2. Cut up the meat and break the bones, then add to a pot with 2 quarts of cold water.

  3. Simmer slowly for about five hours to extract the meat's flavor.

  4. Strain the broth through a fine sieve, removing all fat.

  5. If necessary, reduce the broth by boiling it down, seasoning only with salt and pepper.

Make the dumplings and finish

  1. Season with coarse sea salt and black pepper, then add summer savory.

  2. In a bowl, beat together the egg, milk, and flour until smooth.

  3. Drop spoonfuls of the batter into the soup and boil for three minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Leg of mutton
Provides the main meat flavor and body as it simmers into the broth.
Egg
Helps the batter set into soft, tender drops when boiled in the soup.
All-purpose flour
Thickens the batter so the spoonfuls hold their shape in the broth.
Milk
Adds moisture to the batter, keeping the drops soft rather than dry.

The step that matters

Strain and degrease the broth. Fat that is not removed stays suspended in the broth and makes it greasy. Straining through a fine sieve and skimming lets the fat separate so it can be taken off, leaving a clearer, cleaner-tasting soup.

Swap the summer savory

How well each one fits the dish's main ingredients (mutton, pepper, egg, milk, flour):

Fit is the average pairing score against mutton, pepper, egg, milk, flour. Candidates are from the same food group and used in at least 100 recipes.
