Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onions
Browned in butter first, they build a deeper, sweeter savoury base for the soup.
Tomatoes
Provide the main body, acidity and flavour of the soup once pulped.
Butter
Fat that carries flavour and helps the onions brown.
Celery
Adds aromatic, savoury depth during the long gentle stew.
Carrot
Adds natural sweetness and body to the stewed base.
Gravy
Supplies the liquid and savoury richness that the vegetables simmer in.

The step that matters

Pulp the vegetables through a sieve. Pushing the soft, cooked vegetables through a sieve breaks down their cell walls so the soup becomes smooth and thick. Skipping or rushing this leaves it grainy and thin.

Swap the white pepper

How well each one fits the dish's main ingredients (onion, butter, tomato, celery, carrot, pepper, bread):

  1. Parsleyfits better
  2. Thymefits better
  3. Marjoramfits better
  4. White pepperthe original

Fit is the average pairing score against onion, butter, tomato, celery, carrot, pepper, bread. Candidates are from the same food group and used in at least 100 recipes.
