Ingredients

Directions

Cook the beef

  1. Place the beef in a pot and cover it with cold water.

  2. Bring the water to a boil, then reduce the heat to maintain a moderate boil.

  3. Skim the surface often and boil for 4 to 5 hours, depending on the size of the beef.

Add the vegetables

  1. If using carrots, add them to the pot 45 minutes before serving.

  2. If using cabbage, add it at the same time as the carrots, along with red peppers if desired.

  3. Before serving, drain the cabbage and mix in small pieces of butter.

Serve

  1. Serve the beef in the center of the cabbage, garnished with pickles.

What each ingredient does

Beef
Long simmering in water breaks down connective tissue, leaving the meat tender and moist.
Butter
Melted into the drained cabbage, it adds richness and a silky coating.
Cabbage
Cooked in the broth until tender, it absorbs flavour and becomes a soft side dish.

The step that matters

Keep the boil gentle and skim often. A rolling boil toughens meat proteins and makes the beef stringy, while a gentle simmer keeps it tender. Skimming removes foam and impurities that would otherwise cloud the broth.

Swap the carrot

The recipe marks carrot as optional. How well each one fits the dish's main ingredients (beef, cabbage, pepper, butter):

  1. Potatofits about as well
  2. Onionfits about as well
  3. Leekfits about as well
  4. Carrotthe original

Fit is the average pairing score against beef, cabbage, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
