Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Enriches the sauce and adds richness and flavor to the base.
Flour
Thickens the broth into a binding sauce that holds the filling together.
Egg yolks
Bind the filling and help it set firm when cooked.
Chicken
Provides the main body and texture of the croquette filling.
Mushrooms
Add moisture and earthy flavor to the filling.

The step that matters

Cool the mixture before shaping. A warm, loose filling will not hold its shape and may split or burst in the hot fat. Cooling lets the sauce firm up so the oblongs keep their form through breading and frying.

Swap the nutmeg

How well each one fits the dish's main ingredients (meat, chicken, mushroom, shallot, butter, flour, pepper):

  1. Thymefits better
  2. Capersfits better

Fit is the average pairing score against meat, chicken, mushroom, shallot, butter, flour, pepper. Candidates are from the same food group and used in at least 100 recipes.
