Why it works: Beans and onion match in chemistry and in kitchens. They rank in the top 7% of all ingredient pairs, and cooks put them together in 5,242 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Pork and Beans

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the beans

  1. Soak the beans overnight.

  2. Boil the beans with the sliced onion until almost done.

  3. Remove the onion and transfer the beans to a baking dish.

Bake

  1. Place the salt pork in the center of the beans and add some of the boiling water.

  2. Bake at 350°F (175°C) for about 1 hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beans
Provide the main bulk, and their starch thickens the cooking liquid as they bake.
Salt pork
Adds fat and savory flavor, and slowly renders into the beans during baking.
Molasses
Adds sweetness and a darker color to the dish.

The step that matters

Boil the beans with the sliced onion until almost done.. The beans finish cooking in the oven, so stopping the boil just short of tender helps them keep their shape. Boiling them fully first can leave them split or mushy after baking.

Swap the onion

How well each one fits the dish's main ingredients (beans, pork, molasses):

  1. Potatofits better
  2. Mustardfits better
  3. Sweet potatofits better
  4. Onionthe original

Fit is the average pairing score against beans, pork, molasses. Candidates are from the same food group and used in at least 100 recipes.
