Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the tomatoes

  1. Select smooth, round, firm tomatoes and peel them carefully.

  2. With a pointed knife, extract the inside and place the pulp with a little water in a pot over heat.

Make the filling

  1. Crumb bread into the pulp, season with salt, pepper, and butter, and cook for ten minutes.

  2. Place the tomato skins in a pudding dish and stuff them with the cooked mixture.

Bake

  1. Sprinkle with butter, salt, and pepper, and add bits of butter on top.

  2. Bake in the oven at 400°F (200°C) until browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Their skins form the shell and their pulp becomes the moist, flavourful base of the filling.
Crumb bread
Absorbs the tomato juices and thickens the pulp so the filling holds its shape.
Butter
Adds richness and fat, helping the top brown in the oven.

The step that matters

Cooking the pulp with bread. The pulp must cook long enough for the bread to absorb its liquid and thicken; a runny filling will make the stuffed tomatoes soggy in the oven.

Swap the tomato

How well each one fits the dish's main ingredients (bread, pepper, butter):

  1. Capsicumfits better
  2. Tomatothe original
  3. Potatofits about as well
  4. Asparagusfits about as well

Fit is the average pairing score against bread, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
