Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Swells during soaking and thickens the milk as it cooks, giving the pudding its body.
Milk
Forms the liquid base that the tapioca swells in and sets into a creamy pudding.
Egg yolks
Thicken the mixture into a custard and add richness.
Sugar
Sweetens the pudding and helps soften the set texture.
Egg whites
Beaten and folded on top, adding a light, airy topping.

The step that matters

Cooking the egg yolks into the custard. Egg yolks thicken only when heated enough to set their proteins, but overheating them can curdle the mixture. Add the yolks to the hot mixture gradually and cook gently until it thickens.
