What each ingredient does

Berries
Supply the fruit flavor, color and body that make up the preserves.
Sugar
Adds sweetness and, as it dissolves and cooks down, helps thicken the preserves.

The step that matters

Simmering. Simmer long enough for the sugar to dissolve and the fruit to soften and thicken the mixture. Too little time leaves the preserves runny, while too long a boil can scorch the sugar and darken the flavor.
