What each ingredient does

Raspberries
Provide the main flavour and colour of the vinegar.
Malt vinegar
Extracts the raspberry flavour and acts as the sharp, acidic base.
Sugar
Sweetens the juice and balances the vinegar's acidity.

The step that matters

Boiling the juice with sugar. Boiling only 2 to 3 minutes is brief, so the sugar must fully dissolve and the mixture must reach a rolling boil to stabilise the syrup before bottling.
