Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pearl barley
Gives the drink its body and mild, grainy flavour as starch and flavour leach into the water.
Lemon juice
Adds acidity that brightens the flavour and balances the sweetness.
Sugar
Adds sweetness to taste, rounding out the mild barley flavour.

The step that matters

Boil the barley for 3 minutes and discard both waters. This brief parboil and discarding of the water removes surface dust, impurities and some bitter compounds before the long simmer, leaving a cleaner-tasting, clearer drink.
