Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the meat that is set in the jelly, and its bones and joints flavour the cooking liquid.
Gelatin
Sets the cooking liquid into a firm jelly once it is chilled.

The step that matters

Dissolve the gelatin in the seasoned liquid. Gelatin must fully dissolve in warm liquid before it is poured over the meat. Undissolved granules leave gritty patches, and liquid that is too hot can weaken its setting ability.

Swap the mace

How well each one fits the dish's main ingredients (chicken, pepper, gelatin):

  1. Tarragonfits better
  2. Celeryfits better
  3. Garlicfits better
  4. Macethe original

Fit is the average pairing score against chicken, pepper, gelatin. Candidates are from the same food group and used in at least 100 recipes.
