To Pot Veal

Ingredients

Directions

  1. Parboil the veal, then mince it very small, saving the cooking liquid.

  2. In a clean pan, combine the minced veal with some of the cooking liquid.

  3. Season with white pepper, coarse sea salt, beaten mace, grated nutmeg, minced lemon peel, and lemon juice.

  4. Let it stew until most of the liquid is reduced, stirring frequently to prevent sticking.

  5. Once thick, pour into buttered jars, jelly molds, or cups and let cool.

  6. To serve, turn out of the molds or slice as desired.

  7. For a crispy finish, glaze with egg yolks and sprinkle with bread crumbs mixed with grated lemon, then heat before serving.

  8. Prepare a white sauce by mixing cream, soup, flour, grated nutmeg, and salt, then bring to a boil while stirring.

  9. Cut an oval piece from the top of a loaf of bread to show the meat, pour the sauce over it without touching the sides, and garnish with small egg balls.
