Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Steep the mutton in port wine.

  2. Cut the mutton into thin steaks and flatten them with a rolling pin.

  3. Dredge the steaks with pepper, coarse sea salt, and a little flour.

  4. Roll up the steaks and fill the dish with them.

  5. Optionally, mince a small quantity of onion and sprinkle it over the mutton.

  6. Pour in a sauce and cover the pie with pastry.

  7. Roll out the puff pastry about ½ inch thick to fit the dish.

  8. Glaze the pastry with egg and cut a smaller piece for the top.

  9. Decorate the top with designs as desired.

  10. Bake in a 400°F (200°C) oven until golden brown.
