To Make Rissoles

Ingredients

Directions

Prepare the filling

  1. Roll out the puff pastry and cut it into squares or your desired shape.

  2. In a bowl, mix the minced cold veal or fowl with white pepper, coarse sea salt, a little cream, and the egg yolk.

  3. Heat the mixture gently, ensuring it doesn't boil.

  4. Let the mixture cool.

Assemble and fry

  1. Wet the edges of the pastry.

  2. Place a tablespoonful of the meat mixture in the center.

  3. Fold the pastry over and seal it.

  4. Glaze the top with egg yolk.

  5. Heat boiling dripping in a pan.

  6. Fry the rissoles until golden brown.

  7. Remove them and place on a sieve to drain, keeping them warm until all are cooked.

  8. Serve them hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Puff pastry
Forms the flaky, layered outer case that puffs and crisps when fried.
Cold veal or fowl, minced
Provides the savoury meat filling that gives the rissoles their body.
Cream
Adds moisture to the meat mixture so the filling stays tender.
Egg yolk
Binds the filling and gives the glazed top a rich golden colour.

The step that matters

Heat the filling gently without boiling. Boiling can toughen the egg yolk and dry or curdle the cream, leaving a grainy, less tender filling. Gentle heat keeps the mixture smooth and moist before it cools and is sealed inside the pastry.

Swap the white pepper

How well each one fits the dish's main ingredients (veal, cream, egg):

  1. Nutmegfits better
  2. Tarragonfits about as well
  3. Capersfits about as well
  4. White pepperthe original

Fit is the average pairing score against veal, cream, egg. Candidates are from the same food group and used in at least 100 recipes.
