Stewed Chicken and Dumplings

Ingredients

Directions

  1. Wash the chicken pieces and place them in a deep stew pan with 3 pints of water. Bring to a boil.

  2. In another saucepan, cook the carrot, turnip, and onion slowly for 30 minutes.

  3. Strain the vegetables and add them to the stew pan with the chicken. Mash the vegetables and rub them through the strainer into the stew.

  4. Skim 2 tablespoons of chicken fat from the stew and add it to the saucepan with the cooked vegetables.

  5. When hot, stir in 3 tablespoons of flour and simmer the stew until the chicken is tender, about 2 hours.

  6. Season with salt, pepper, and butter to taste.

  7. Ten minutes before serving, place the stew on the front of the stove and add the dumplings. Cook for 10 minutes.
