Why it works: Butter and flour are a kitchen classic. They rank in the top 12% of all ingredient pairs, and cooks put them together in 124,287 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓
Old English Plum Pudding
Ingredients
Directions
In a bowl, mix lard, butter, and currants.
Dust with flour and add water to form a stiff dough.
Take one-third of the dough and roll it out into a large round sheet.
Spread 1½ cups of sugar, ⅔ cup of butter, and 1 cup of currants on the dough.
Fold the dough around the filling like a dumpling.
Roll out the remaining dough and wrap it around the dumpling.
Tie the wrapped dumpling securely in a cloth.
Boil for 3 hours.
Serve with sauce or moistened sugar.
