Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the dough

  1. Combine graham flour, white flour, sweet cream, and baking powder in a bowl to form a stiff dough.

  2. Roll out the dough thinly.

Assemble and shape

  1. Cover the rolled dough thickly with dried currants.

  2. Place another sheet of dough on top.

  3. Roll the two sheets together with a rolling pin.

  4. Cut the dough into desired shapes.

  5. Prick each shape deeply with a fork.

Bake

  1. Bake in a moderate oven at 350°F (175°C) until golden.

What each ingredient does

Graham flour
Provides the wholesome, slightly nutty base and structure of the dough.
White flour
Adds gluten structure so the stiff dough rolls thinly and holds its shape.
Sweet cream
Supplies fat and moisture that bind the flour into a stiff, tender dough.
Baking powder
Releases gas during baking to lighten the crackers and help them rise slightly.
Dried currants
Add concentrated sweetness and chewy pockets of fruit inside the layered dough.

The step that matters

Pricking each shape deeply with a fork. Piercing the dough lets steam escape during baking, so the crackers stay flat and crisp instead of puffing or blistering unevenly.

Swap the currant
