Ingredients
Directions
Prepare the vegetables
Pare and dice the carrots and turnip.
Add the string beans, tomatoes, onion, and cabbage heart to salted boiling water and cook for 10 minutes, leaving out the tomatoes.
Drain the vegetables and let them cool.
Make the soup

Add the parboiled vegetables, tomatoes, and green peas to the stock and stew for 30 minutes.
Pour everything out together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Tomatoes
- Add acidity and body to the broth as they break down during stewing.
- Onion
- Contributes aroma and a mild sweetness once cooked.
- Carrots
- Add natural sweetness and colour to the soup.
- Green peas
- Add sweetness, colour and a soft texture to the stew.
- Turnip
- Adds a mild, earthy flavour and firm texture to the vegetables.
The step that matters
Strain and skim the stock. Fat in cold stock solidifies on the surface and can leave the broth greasy. Removing it thoroughly and skimming while the stock boils keeps the soup clear and clean-tasting before the vegetables go in.
Swap the peas
How well each one fits the dish's main ingredients (carrot, turnip, beans, tomato, onion, cabbage):
- Lentilsfits better
- Chickpeafits better
- Chestnutfits better
- Peasthe original
