Ingredients
- thin slices of salt pork or ham
- breast of lamb
- 1 small onion
- a bunch of sweet herbs
- 4 pints boiling water
- ½ pound macaroni
- pepper
- salt
- gravy
- browned flour
Directions

Cover the bottom of a broad pot with thin slices of salt pork or ham.

Place the lamb on top, then add sliced onion and sweet herbs.

Pour in boiling water and cover with a lid and weight.

Cook slowly for 2 hours, turning the meat after the first hour.

Boil macaroni in broth for 20 minutes, then drain and season with pepper and salt.

Arrange macaroni on a hot meat dish.

When the lamb is done, place it on the macaroni and keep warm.

Strain the gravy, thicken with browned flour, and boil once before pouring over the lamb and macaroni.
