Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Soup stock
Forms the liquid base that is clarified and seasoned.
Sparkling gelatine
Adds body so the clear soup has a light, slightly firm texture.
Lemon juice
Adds acidity that brightens the flavour of the clear soup.
Wine
Adds depth and aroma to the seasoned stock.

The step that matters

Simmer and skim until clear. Gentle simmering lets impurities and fat rise to the surface where they can be skimmed off. Boiling vigorously breaks them into the liquid and leaves the soup cloudy.

Swap the onion

How well each one fits the dish's main ingredients (celery, lemon, wine):

  1. Carrotfits better
  2. Tomatofits better
  3. Broccolifits better
  4. Onionthe original

Fit is the average pairing score against celery, lemon, wine. Candidates are from the same food group and used in at least 100 recipes.
