Roast Beef

Why it works: Beef and pepper are a kitchen classic. They rank in the top 10% of all ingredient pairs, and cooks put them together in 18,971 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Remove the bones from the rib roast and roll the meat, securing it with skewers or thin cloth.

  2. Wipe the meat with a wet towel, then a dry one, and place it in a dripping pan.

Roast

  1. Add 1 cup of hot water and roast in a hot oven at 400°F (200°C) for 20 minutes per pound for large roasts or 15 minutes per pound for small roasts.

  2. Turn the meat occasionally to brown on all sides.

Make the gravy and serve

  1. When done, transfer to a hot platter, pour off the drippings, and add 1 cup of hot water.

  2. Season with pepper and salt, thicken with browned flour, and boil once before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef roast
Forms the main body of the dish, cooking to a tender, sliceable texture as it roasts.
Browned flour
Thickens the drippings into a gravy as its starch swells when boiled.
Coarse sea salt
Seasons the meat surface and gravy, enhancing the savory flavor of the beef.

The step that matters

Turning the meat to brown on all sides. Browning from dry, high heat builds flavorful compounds on the surface through the Maillard reaction. Uneven turning leaves pale patches and a less savory crust.
