What each ingredient does

Dried beans
Form the body of the soup, softening and thickening as they cook.
Salt pork
Adds fat and savory flavor that carries through the long simmer.

The step that matters

Boil the beans before the long simmer. Soaking and a brief boil, then discarding that water, removes compounds in raw beans that can upset digestion and leaves a cleaner-tasting broth. Skipping the discard leaves the soup harsher and less clear.

Swap the lemon

How well each one fits the dish's main ingredients (beans, pork, pepper):

  1. Avocadofits better
  2. Limefits better
  3. Mangofits about as well
  4. Lemonthe original

Fit is the average pairing score against beans, pork, pepper. Candidates are from the same food group and used in at least 100 recipes.
