What each ingredient does

Ripe tomatoes
Provide the bulk and body of the sauce as they break down during simmering.
Onions
Add savory depth and body as they soften and blend into the sauce.
Vinegar
Adds acidity that gives the sauce its tang and helps preserve it.
Sugar
Adds sweetness that balances the acidity of the vinegar.
