What each ingredient does

Flour
Provides the structure that holds the cake layers together.
Butter
Adds richness and helps give the cake a tender crumb.
Eggs
Bind the batter, add richness, and whipped whites lighten the filling.
Sugar
Sweetens the cake and helps it brown as it bakes.
Baking soda
Reacts with the acidic cream of tartar to lift and lighten the cake.
Desiccated coconut
Adds coconut flavour and a chewy texture to the filling.

The step that matters

Fold in the coconut gently. The beaten egg whites hold air that gives the filling its lightness. Stirring vigorously deflates the foam, leaving a dense, heavy filling.

Swap the coconut

How well each one fits the dish's main ingredients (butter, sugar, egg, milk, cream, flour):

  1. Vanillafits better

  3. Coconutthe original

Fit is the average pairing score against butter, sugar, egg, milk, cream, flour. Candidates are from the same food group and used in at least 100 recipes.
