What each ingredient does

Pearl barley
Its starch thickens the water as it simmers, giving the gruel body.
Lemon juice
Adds acidity that brightens the flavor and balances the sweetness.
Sugar
Adds sweetness that rounds out the lemon and the grain flavor.

The step that matters

Simmering the barley. Barley needs a long, gentle simmer for its starch to release and the grains to soften. Boiling hard can break the grains apart and make the texture uneven, so keep the heat low once it boils.

Swap the lemon
