Why it works: Horseradish and mustard match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 1,832 recipes. Both carry coumarin, which smells sweet, hay. The science ↓

Pickled Peppers

Ingredients

Directions

  1. Cut the stems off the peppers in a round circle and set them aside.

  2. Mix finely chopped cabbage, horseradish, mustard seed, and coarse sea salt.

  3. Wash the peppers in cold water, then fill each pepper with the mixture.

  4. Replace the cut-out piece of the stem and tie it with coarse thread.

  5. Pack the peppers in stone jars and fill with cold, sharp vinegar.

  6. Let them sit for two weeks before using.
