What each ingredient does

Cabbage lettuce
Forms the crisp, leafy body of the salad that holds the dressing.
Olive oil
Coats the leaves with fat, giving a smooth mouthfeel and carrying flavour.
Tarragon vinegar
Adds acidity that sharpens the dressing and balances the oil.

The step that matters

Toss the salad quickly. Oil and vinegar must be emulsified by beating before the lettuce is added, and the leaves should be tossed only briefly so they stay crisp and do not wilt or go limp under the acid.
