Pearl Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Make the batter

  1. Preheat the oven to 350°F (175°C).

  2. Cream the butter and sugar together until light and fluffy.

  3. Add the egg whites and mix well.

  4. Stir in the milk.

  5. In a separate bowl, combine the flour, cornstarch, cream of tartar, and baking soda.

  6. Gradually add the dry ingredients to the wet mixture, mixing until smooth.

Bake and frost

  1. Pour the batter into a greased cake pan and bake for 25-30 minutes or until a toothpick comes out clean.

  2. For the frosting, beat the egg white until stiff peaks form.

  3. Fold in the chopped almonds and sugar until well combined.

  4. Spread the frosting over the cooled cake and enjoy.

What each ingredient does

Butter
Creamed with sugar to trap air, giving the cake a tender, rich crumb.
Egg whites
Add structure and lift to the batter as they set in the oven.
Flour
Provides the main structure that holds the cake together as it bakes.
Cornstarch
Softens the crumb, giving a finer, more tender texture than flour alone.
Cream of tartar
Stabilizes the egg whites and works with baking soda to help the cake rise.
Baking soda
Reacts with the acidic cream of tartar to produce gas that leavens the batter.

The step that matters

Beating the egg white for the frosting. The white must be beaten to stiff peaks without overbeating; under-whipped whites will not hold the frosting, and overbeaten whites turn dry and grainy.
