Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. In a large bowl, combine the veal, salt pork, beaten eggs, powdered crackers, salt, black pepper, and ground cloves.

  2. Knead the mixture until well combined.

  3. Press the mixture into a bread pan, shaping it into a loaf.

Bake

  1. Place the loaf in a dripping pan and bake at 350°F (175°C) for 1.5 hours, basting occasionally.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the main body of the loaf and gives it a meaty texture.
Eggs
Bind the mixture together and help the loaf hold its shape as it sets.
Powdered crackers
Absorb moisture and help bind the meat so the loaf stays tender.
Salt pork
Adds fat, which keeps the lean veal moist and adds flavor during baking.

The step that matters

Knead the mixture until well combined. Thorough kneading spreads the eggs, crackers and fat evenly through the chopped veal, so the loaf binds together and bakes with a uniform texture rather than crumbling or turning dry in patches.

Swap the clove

How well each one fits the dish's main ingredients (veal, pork, egg, pepper):

  1. Sagefits better
  2. Parsleyfits better
  3. Marjoramfits better
  4. Clovethe original

Fit is the average pairing score against veal, pork, egg, pepper. Candidates are from the same food group and used in at least 100 recipes.
