Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Neck of mutton
Gives the broth its meaty flavour and body as it simmers.
Barley
Thickens the broth and adds a chewy texture as it cooks.
Carrots
Add natural sweetness and colour to the soup.
Cabbage
Adds bulk and a mild, sweet vegetable flavour as it softens.

The step that matters

Skimming the foam. Foam that forms early contains coagulated proteins and impurities. Removing it keeps the broth clear and clean-tasting rather than cloudy or scummy.

Swap the onion
