Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ox tails
Release collagen and flavor into the broth, giving body and richness to the soup.
Flour
Thickens the broth slightly as it cooks.
Arrowroot
Thickens the soup to a glossy, lightly clear consistency when boiled.
Onions
Add aromatic sweetness and depth to the broth.
Carrots
Add sweetness and body to the broth as they soften.

The step that matters

Adding the arrowroot. Arrowroot must be rinsed in a little water first so it disperses evenly, then boiled briefly to activate its thickening. Adding it dry or undissolved causes lumps and an uneven texture.

Swap the white pepper
