What each ingredient does

Salt pork
Renders fat that browns the pot base and adds savory, smoky flavor to the broth.
Potatoes
Release starch as they cook, thickening the broth and giving the soup body.
Clams
Provide the main seafood flavor and tender texture in the soup.
Flour
Thickens the milk and broth into a smoother, creamier consistency.
Milk
Adds richness and creaminess, softening the broth's flavor.
Onion
Softens and sweetens as it cooks, building the soup's aromatic base.

The step that matters

Adding the flour mixture. Flour must be fully blended in a little cold water first, then stirred in, or it forms lumps instead of thickening the soup evenly. Boiling afterward cooks out the raw flour taste and sets the body.
