What each ingredient does

Potatoes
Break down when boiled and pass through a colander, thickening the soup into a smooth body.
Milk or cream
Adds richness and moisture, giving the soup its thick, creamy consistency.
Butter
Adds fat for richness and a smooth, rounded flavour in the soup.
Dry bread
Frying in lard browns the cubes and gives a crisp texture against the soft soup.

The step that matters

Passing the boiled potatoes through a colander. Boiled potatoes must be fully tender so they mash into a smooth purée. Undercooked pieces stay grainy and the soup will not reach a creamy texture.
