Potted Fish

Ingredients

Directions

Prepare the fish

  1. Remove the backbone from the fish.

  2. Place allspice and cloves in small muslin bags.

  3. Sprinkle coarse sea salt on each fish.

  4. Roll the fish in a cloth.

  5. Sprinkle the fish with cayenne pepper.

Pot and seal

  1. Layer fish, spice bags, and sago in an earthen jar.

  2. Cover with cider vinegar.

  3. Seal the jar tightly with a plate and cover with rolled-out dough. Ensure the dough adheres to the jar to make it air-tight.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fish
Forms the main body of the dish, becoming tender during the long, gentle cooking.
Coarse sea salt
Seasons the fish and draws out moisture, helping to preserve it.
Cider vinegar
Adds acidity that sharpens flavour and helps preserve the fish.
Sago
Fills the jar around the fish, helping to hold its layers in place and absorb liquid.
Allspice and cloves
Contribute warm, aromatic spice flavour that penetrates the fish during cooking.

The step that matters

Sealing the jar airtight. If the dough seal leaks, steam and liquid escape during the long boil and the fish can dry out or spoil. A tight seal keeps moisture and aroma inside the jar while it cooks.

Swap the clove

How well each one fits the dish's main ingredients (fish, allspice, pepper, cider, vinegar):

  1. Clovethe original
  2. Thymefits about as well
  3. Tarragonfits less well
  4. Marjoramfits less well

Fit is the average pairing score against fish, allspice, pepper, cider, vinegar. Candidates are from the same food group and used in at least 100 recipes.
