Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare and roast

  1. Preheat the oven to 350°F (175°C).

  2. Dredge the beef roast lightly with flour and season with coarse sea salt and black pepper.

  3. Place the roast in the oven and baste frequently while roasting.

  4. Roast for 15 minutes per pound for rare, longer for well done.

Serve

  1. Serve with a sauce made from the drippings, adding Worcestershire sauce and tomato ketchup.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef roast
The main protein; its fat and connective tissue soften and flavor the meat as it roasts.
Flour
Helps the surface brown and lightly thickens the drippings used for the sauce.
Worcestershire sauce
Adds savory, tangy depth to the drippings sauce.
Tomato ketchup
Adds sweetness and acidity to the drippings sauce.

The step that matters

Roasting time per pound. Total cooking time depends on the roast's weight and the doneness you want. As meat heats past the target, its proteins tighten and moisture is lost, so a roast left in too long turns dry and well done.

Swap the tomato

How well each one fits the dish's main ingredients (beef, flour, pepper, sauce, ketchup):

  1. Capsicumfits better
  2. Horseradishfits better
  3. Shallotfits better
  4. Tomatothe original

Fit is the average pairing score against beef, flour, pepper, sauce, ketchup. Candidates are from the same food group and used in at least 100 recipes.
