  2. Add milk, flour, butter, nutmeg, and salt to the yolks and mix well.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Egg whites add lift and a light, airy structure; yolks enrich the custard and help it set.
Flour
Starch thickens the batter and gives the baked pudding a firm, sliceable body.
Milk
Provides liquid that bakes into a tender custard-like texture.
Butter
Adds fat for richness and a smoother, more tender crumb.

The step that matters

Folding in the beaten egg whites. Whites hold air only if they are beaten to soft peaks and folded in gently. Stirring them vigorously knocks out the air, so the pudding rises less and turns denser.

Swap the nutmeg

How well each one fits the dish's main ingredients (egg, milk, flour, butter):

  1. Nutmegthe original
  2. Cinnamonfits about as well
  3. Capersfits less well
  4. Parsleyfits less well

Fit is the average pairing score against egg, milk, flour, butter. Candidates are from the same food group and used in at least 100 recipes.
