What each ingredient does

Raw sugar
Feeds the yeast, producing alcohol and carbon dioxide during fermentation, and gives the wine its sweetness.
Yeast
Converts the sugars into alcohol and carbon dioxide, driving the fermentation.
Isinglass
A fining agent that helps clear the wine by settling suspended particles.
Raisins
Add fermentable sugar and fruit flavour to the wine.
Seville oranges
Contribute acidity and aroma from their juice and peel.

The step that matters

Adding the yeast when nearly cold. Yeast is killed by very hot liquid, so the mixture must be nearly cold before it goes in. Adding it too early can stop fermentation before it starts.

Swap the raisin

How well each one fits the dish's main ingredients (ginger, sugar, lemon, orange):

  1. Limefits better
  2. Mangofits better
  3. Blackberryfits better
  4. Raisinthe original

Fit is the average pairing score against ginger, sugar, lemon, orange. Candidates are from the same food group and used in at least 100 recipes.
