Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Loaf sugar
Provides sweetness and the body of the syrup.
Citric acid
Adds sourness that sharpens the lemon flavour.
Oil of lemon
Supplies the fragrant lemon aroma and flavour.

The step that matters

Once cool, add the oil of lemon.. Citrus oils are volatile, so heat drives off much of their aroma. Adding the oil after the syrup has cooled keeps the lemon flavour bright and fresh.

Swap the nutmeg

How well each one fits the dish's main ingredients (sugar, lemon):

  1. Cinnamonfits better
  2. Gingerfits better
  3. Marjoramfits about as well
