Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Provides sweetness and body, the main bulk of the syrup once reduced.
Egg white
As it heats, it coagulates and traps impurities so straining clears the liquid.
Tartaric acid
Adds sharp acidity that balances the sweetness of the sugar.
Lemon juice
Adds bright acidity and citrus aroma.

The step that matters

Adding the egg white while boiling. The egg white must be stirred in while the mixture is boiling so it coagulates and binds cloudy particles. Straining afterwards then removes them, leaving a clear liquid.

Swap the lemon
