Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Swells during long simmering in milk to thicken the pudding into a soft, creamy set.
Milk
Forms the liquid base that the tapioca cooks in, giving the pudding its body and richness.
Egg yolks
Thicken the custard base and add richness and a smooth texture.
Egg whites
Whipped to stiff peaks, they form a light meringue topping that browns under the broiler.
Sugar
Sweetens the pudding and, dissolved into the whipped whites, stabilises the meringue.

The step that matters

Boiling the soaked tapioca in milk. Tapioca must simmer long enough to fully soften and swell; if it is undercooked it stays firm and grainy, and milk scorches easily, so it needs steady attention while it thickens.

Swap the coconut
