Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whites hold the filling and the boiled yolks form the creamy stuffing.
Butter
Adds fat and richness to the dish and helps the coating brown when fried.
Bread crumbs
Form a crisp, golden outer crust during frying.
Flour
Dry dusting that helps the beaten egg coating cling to the eggs.

The step that matters

Dip and coat in layers. Each egg must be dusted dry, dipped in beaten egg, then coated in crumbs so the coating sticks evenly. Skipping the flour lets the egg slide off, and wet eggs make the crumbs gummy and uneven when fried.

Swap the parsley

How well each one fits the dish's main ingredients (egg, ham, pepper, butter, flour, bread):

  1. Parsleythe original
  2. Nutmegfits about as well
  3. Capersfits about as well
  4. Marjoramfits less well

Fit is the average pairing score against egg, ham, pepper, butter, flour, bread. Candidates are from the same food group and used in at least 100 recipes.
