What each ingredient does

Mullet or bream
Is the main protein that is cooked gently by steam until tender.
Vinegar or lemon juice
Acidity in the washing water brightens the flavour of the fish.
Lemon juice
Adds acidity that brightens the fish and the sauce.
Coarse sea salt
Seasons the fish and, dissolved in the wash water, helps firm its flesh.

The step that matters

Steaming for 10 to 12 minutes. Fish cooks quickly and turns dry and tough if overcooked. Covering the dish with greased paper and setting it in water keeps the heat gentle and the moisture in the flesh.
