Why it works: Parsley and nutmeg match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 5,062 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ingredients

Directions

  1. Place the veal legs in a pot with boiling water and skim the surface.

  2. Once skimmed, add butter to the pot.

  3. Boil the rice separately until cooked.

  4. When the soup is done, remove the bones and meat, then strain the soup.

  5. Add the cooked rice to the strained soup and bring to a boil.

  6. In a dish, beat the egg yolk with a little water, then add chopped parsley and nutmeg.

  7. Pour the egg mixture over the soup and serve.
