Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the batter

  1. Dissolve the baking soda in a little boiling water.

  2. In a large bowl, combine the milk, cornmeal, graham flour, all-purpose flour, molasses, egg, dissolved baking soda, and salt. Mix well until smooth.

Steam and bake

  1. Pour the mixture into a 5-pound lard pail for steaming.

  2. Steam for 5 to 6 hours.

  3. After steaming, bake in a preheated oven at 350°F (175°C) for 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cornmeal
Provides the coarse, hearty body that gives the bread its structure.
All-purpose flour
Adds gluten-forming structure so the loaf holds together after steaming.
Molasses
Adds sweetness, moisture, and the dark brown color, and its acidity reacts with the baking soda.
Egg
Binds the batter and helps set the crumb as it cooks.
Baking soda
Reacts with the acidic molasses to release gas, helping the bread rise.
Milk
Supplies liquid that hydrates the flours and cornmeal into a pourable batter.

The step that matters

Dissolve the baking soda fully before mixing. Baking soda must be evenly dissolved so it spreads through the batter and reacts with the molasses throughout. Undissolved lumps cause uneven rise and pockets of bitter flavor.
