What each ingredient does

Almonds
The nuts are the product; blanching loosens their skins so they can be removed.
Boiling water
Heat loosens the dark skin so it can be rubbed off easily.
Cold water
Cold water stops the heat so the almonds cool without continuing to cook.

The step that matters

Pour boiling water over the almonds and let them stand for 1 minute.. The brief soak loosens the skins. Too short and the skins will not slip off; too long and the almond flesh can soften.
